Hi, I'm hoping someone can help me put together a schedule for 16 player 8 guy/8 gal coed king/queen of the beach volleyball tournament on two nets, where every guy plays every other guy once, and every girl plays every girl once (so 7 games per player).  I'll run this event over and over, so getting this right would be a beautiful thing.  :)

I tried to find it here without having to write, but with no luck. A post from Ian seemed to be closest but not quite it.

If you have only 7 games per player, then there must be one opposite sex player with whom who don't play as a partner and one opposite sex player with whom you don't play as an opponent.  To get balance they have to be the same person, and so the resulting schedule is often called a spouse avoiding tournament, but of course there is no reason for the participants to be spouse pairs.  You are free to choose who avoids whom.  There is a catalogue of schedules here and if you go to the 16 player one, then all you need do is to split each round of 4 games into two mini-rounds.

I'm new to running these, so wanted to ask if it was smoother to run it with every guy playing with every girl instead and changing it to total 8 games per player at the end of the day?

Which makes participants the happiest?

Or by "where you partner and oppose everyone except your spouse exactly once", that includes both genders?

I think you could argue either way.  If you play the 7 games then you are not getting the full social mixing as for everyone there is someone with whom they never play.  If you play 8 games then you must meet somebody twice in opposition, for example in my schedule here M1 v M2,  F1 v F2,  etc., oppose twice, and of course you risk getting complaints from the person who has to play against the best player twice.  From a practical standpoint, it is harder to find schedules of the larger 8 game kind.
