The 8 player one would be on 1 court
the 16 player one would be on 2 courts

Is
this schedule
the sort of format you are looking for? It is for 16 players, where all M/F partnerships occur exactly once, and so I think it could be adapted to your 2 court tournament. For example you could take (M2 F3 : M6 F5) from round 1 and (M3 F6 : M4 F8) from round 3 to form a new round with 2 games, just another 4 pairs like this are needed to reformat the schedule for play on 2 courts.
A similar tournament for 8 players would be:
M1 F1 v M2 F4
M2 F3 v M4 F4
M2 F1 v M3 F2
M1 F4 v M3 F3
M1 F2 v M4 F1
M1 F3 v M2 F2
M3 F1 v M4 F3
M3 F4 v M4 F2
