If you use only 6 tables for the last two weeks, then there are exactly enough slots for everyone to play each other twice. I have a prototype program that will try to solve this type of problem and it produces the following:

The 7 columns are the tables and each player will play either 4 or 5 times on the first six tables, and exactly 3 times on table 7. The groups of six rows are the weeks and each player should play 5 or 6 times a week at the start and 4 or 5 times for the last two rounds.
It's not perfect: for example the pair GK plays both their matches in the week 3.
