Search for swiss system. It is by far the most popular format for chess tournaments but there is no reason it couldn't be used for other sports/games as well if equipment/playing facilities are available, games don't require much supervision (referees, judges, umpires, tournament directors, etc.) and are run for the benefit of the players.
